The other day I was craving chocolate chip muffins and I surfed the Internet in order to find a recipe that would look appealing to me. I decided to go with Betty Crocker's version that I found on a Greek blog and the result was very satisfying: moist, chewy, delicious chocolate chip muffins!
So, in order to give it a try, you will need the following ingredients:
- One glass (around 220 ml) of buttermilk
- Half glass of melted unsalted butter
- One egg
- 1 and 3/4 glasses of flour
- 3/4 glass of caster sugar
- 1/2 glass of bitter cocoa
- One teaspoon of baking soda
- One teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1/2 glass of chocolate chips
Method:
Preheat the oven to 190 Degrees Celsius. Fill a twelve muffin baking tray with paper cups.
In on bowl, mix the dry ingredients: the flour, the sugar, the cocoa, the baking soda, the vanilla extract, the salt and the chocolate chips. In another bowl mix the butter with the buttermilk and the egg. Combine the two mixtures and mix well.
Fill the paper cups and bake for around 15-20 minutes. Adjust the baking time to your individual oven and test the muffins with a toothpick, to make sure that they are done.
Allow to cool slightly and remove from the baking tray.
