Anyobody in the mood for pancakes?

The other day I decided to make pancakes for the first time and surprisingly enough, they turned quite decent! In order to make the batter, I used the following:

- 2 eggs
- 1 teacup full of flour
- 300 ml of milk
- 2 table spoons of melted margarine
- 1 vanilla portion
- a pinch of salt
- 2 table spoons of caster sugar

First I mixed the flour with the eggs and then I added all the remaining ingredients. The batter you will get after this will not be thick and you will also have to put it in the fridge for an hour, so that it thickens a bit.

After that, you will take a small frying pan and you will grease it lightly. Before you pour the batter for the first pancake in the pan, make sure that it is very hot. You will pour an amount of batter (depending whether you want your pancakes thick or lighter) at the center of the frying pan and will turn quickly the pan, so that all the frying surface is coated. Once the first side is done, you will have to flip the pancake with the assistance of a spatula. The second side takes less time to make.

As far as the filling is concerned, I served them with nutella and sliced bananas and alternatively with blueberry jam, both versions topped with whipped cream and grated chocolate - or sugar sprinkles!

Yummy!
